RESEPI CUCUR UDANG BERGAYA <br />============================<br /><br />By ~ Aleen Aireish <br />sumber ~ hakaq long mariana zainal<br /><br />Bahan-bahan :<br /><br />Udang segar (tak kisah korang nak size apa)<br />~>> cuci bersih, tapis toskan air udang<br /><br />4 1/2 cawan tepung gandum(1/2 kg)<br />1/2 sdb yis kering<br />1/2 sdb baking powder<br />1 biji telur gred A<br />1 sdb gula<br />1 sdt garam (saya buh serbuk cukup rasa)<br />Sedikit pewarna kuning (optional blh buh serbuk kunyit )<br />2 1/2 cawan air (agak2 bancuhan..)<br />1 batang carrot disagat (tak buh stok habis)<br />taugeh<br />kucai (saya buh bab suka kucai dlm cekodoq) <br />daun sup (diracik halus)<br />3 biji bawang kecil (saya tambah, hiris nipis..saya suka ada bau2 wangi bawang masa goreng)<br /><br />Cara-caranya :<br /><br />- Satukan semua bahan, perap 1 jam..<br /><br />- Panaskan minyak, (minyak banyak yer),api sederhana rendam senduk (dlm 1/2jam jugak saya rendam, bab sibuk dgn keje lain dulu..)<br /><br />- Masukkan sedikit adunan dalam senduk yang dah panas, letak udang segar atasnya.. <br /><br />- Masukkan senduk dalam minyak, tenggelam yer senduk tu, biarkan seketika, elok je cucoq tu lekang sendiri dari senduk.. Cara sediakannya :<br />
- Rebus sekejap pucuk ubi yang dah di hiris kasar tadi. Toskan.<br />
- Di dalam lesung batu, tumbuk cili api dan kunyit hidup hingga hancur. Kemudian masukkan ikan bilis dan hirisan serai tumbuk kasar. <br />
- Masukkan ke dalam periuk.<br />
- Masukkan santan, tempoyak, asam keping, petai, pucuk ubi, pucuk kaduk, pucuk labu dan gaul atas api sederhana.<br />
Masak hingga mendidih dan masukkan garam & gula sesuaikan rasa<br />
Masak ikut kepekatan yang dikehendaki. <br />
*kalau pucuk kaduk dengan pucuk labu takde, boleh jer masak pucuk ubi tu aje..jgn iku rules sgt.. sat gi takde pucuk2 tu mogok masak pulak..<br />

Cara bersih ayam :<br />
2 keping isi ayam [mana2 bahagian isi ayam]<br />
~> cuci bersih<br />
~> didih air<br />
~> masukkan isi ayam dlm air mendidih hingga berubah putih,tak lama sekejap je, angkat, air rebus tu buang tak mau guna dah. Cara ni dinamakan cuci ayam.<br />

2 jenis fish ball [putih & coklat]<br />
2 ketul sengkuang [dipotong dr sebiji sengkuang]<br />
1 s/b Chicken stok maggi<br />
1 s/mkn minyak wangi/myk bawang putih [ambil bawang nya aje]<br />
1 kiub ayam maggi<br />
3 ketul kecil gula batu<br />
1 s/k lada putih<br />
garam utk sesuaikan rasa [jika perlu]<br />
daun bawang<br />

Caranya :<br />
~> dlm periuk didih air, masukkan sengkuang, ayam & myk wangi, biarkan mendidih hingga ayam betul masak.<br />
~> angkat isi ayam yg dh masak tu, nnt nak hiris nipis<br />
~> masukkan kiub ayam, gula batu <br />
~> masukkan chicken stok, lada putih<br />
~> sesuaikan rasa, boleh tambah garam <br />
~> masukkan fish ball, biarkan fish ball tu berenang-renang sekejap dlm sup tu sambil api biasa2 je.. lps tu ok, tutup api..siap<br />

- masukkan kueteow kacau, biarkan sebentar<br />
- masukkan semua semua bahan di atas KECUALI telur & taugeh ok. kacau rata, besarkan api, biarkan kueteow tergoreng berubah menjadi berbintik krn terbakar, nnt naik aroma yg sgt sedap bau satu rumah.<br />

Bahan untuk mandikan ayam :<br />

2 1/2 s/b gula pekat/MALTOSE syrup <br />
8 s/b cuka makan <br />
2 1/2 cwn air biasa<br />

Caranya :<br />
- Ayam seekor sederhana kecik, senang nk handle , x berat n bila bersidai berjemur tgh panas cpt kering.. <br />
- sediakan besi cangkuk utk HANG ayam<br />
- semua bahan di atas ni, masukkan dlm kuali biarkan mendidih, menggelegak mandikan ayam tu dgn cara siram2 ayam dgn senduk dlm 15 mnt atau hingga kulit ayam tu nampak berkilat & tegang. sampai kaler dia sekata gold2 gitew.. dh siap mandikan kering sebentar..<br />

Bahan untuk Sumbat Ayam :<br />

2 s/b - 5 mix seasoning spices [kalau nak spices ni ada jual kat kedai ubat cina]<br />
1 s/k garam halus <br />
1 s/mkn lada putih<br />
sedikit ajinomoto [optional]<br />

Caranya :<br />
- ayam dah kering sebentar, campurkan semua bahan atas ni, sumbat dlm bontot ayam sapu bagi rata.<br />
Penting Part ni :<br />
- lps dah sumbat bahan spices tu gi lah sidai ayam tu.. mana2 tempat ygselamat lau tak kang merana ada makhluk yg bawak larik..berjemur la 3-4 jam hingga kulit ayam tu bila kita sentuh rasa mcm sentuh kertas..<br />

Step 3<br />
=====<br />
- guna kuali NON-STICK lau tak mau ayam melekat,<br />
- ayam dah cukup jemur, boleh mandikan, siram2 kan sebentar dgn minyak yg betul2 panas yer..<br />
- gorengkan dlm minyak 15 minit mcm tu.. api jgn kuat lah nnt hangit.. apa2 pun bergantung pd cara korang goreng ayam ni.. lau agak tk masak lg.. tambah je masa goreng tk ada masalah..<br />

NOTA KAKI :<br />
lau umah flat, apartment, condo mcm umah bandor ni, korang hala kan kipas angin pada ayam yg bersidai ni utk keringkan kulit dia..<br />

Bahan-bahan : Untuk Ayam<br />

2 keping paha ayam [nak buat 1 ekor pun blh]<br />
1 ikat daun bawang - simpulkan<br />
1 inci halia ketuk<br />
1/2 s/k garam<br />
1 1/2 liter air [agak2]<br />
Air ais untuk merendam ayam<br />
<br />
Caranya :<br />
- Didihkan air, masukkan daun bawang & halia serta garam, biarkan boiling naik bau..<br />
- Celup ayam sebentar, kemudian angkat untuk mengelakkkan ayam mengecut jika terus di masukkan dalam air mendidih<br />
- Masukkan semula ayam ke dalam periuk<br />
- Masak dgn api sederhana biarkan mereneh selama 10-15 minit <br />
- tutup api dan terus tutup periuk tu dgn tudung periuk, biarkan 15-20 minit lg<br />
- Angkat ayam dan masukkan ke dalam bekas berisi air ais<br />
- Rendam selama 30 minit jam<br />

Bahan-bahan : Untuk Nasi<br />

2 pot beras - cuci dan toskan<br />
3 1/2 cawan air rebusan ayam<br />
1 inci halia - diketuk<br />
3 ulas bawang putih - dicincang halus<br />
1 batang serai - diketuk<br />
3 s/b myk masak<br />
1 s/k serbuk pati ayam [saya guna kiub ayam]<br />

1 helai daun pandan - disimpul letak dalm air kukusan, didihkan air dahulu.<br />
<br />
Caranya :<br />
- Panaskan minyak, tumis bawang putih + halia + serai hingga naik bau dan bawang putih turn warna coklat perang<br />
- Masukkan beras dan kacau hingga bergaul rata<br />
- Alihkan beras ke dalam periuk dan tambahkan air rebusan dan kiub ayam<br />
- Kukus dalam kukusan hingga masak.<br />

Bahan-bahan : Untuk Sos Cili<br />

8 tangkai cili merah besar - potong<br />
6 biji cili pedas<br />
5 ulas bawang putih<br />
1 inci halia<br />
1 batang serai - hiriskan dulu<br />
1 s/k garam<br />
1 s/b gula<br />
5 s/b cuka makan<br />
1/3 cawan air rebusan ayam [agak2]<br />

Caranya :<br />
- Dalam blender kisar halus cili + bawang putih + halia + serai dan air rebusan serta cuka makan bersama dgn gula & garam secukupnya.<br />
- masak atas api sebentar, siap<br />

Bahan-bahan : Untuk Sos Kicap Hitam <br />

3 ulas bawang putih - cincang halus<br />
1 s/b minyak untuk menumis<br />
1 s/b sos tiram<br />
3 s/b kicap cair<br />
1 s/k kicap pekat<br />
1 s/b gula<br />
1/3 cawan air rebusan ayam [agak2]<br />
1 sudu kecil tepung jagung, bancuh dengan sedikit air utk pekatkan sdkt sos tu<br />
sedikit myk utk menumis<br />
<br />
Caranya :<br />
- Tumis bawang putih hingga perang.<br />
- Masukkan air rebusan + sos tiram + kicap cair + kicap pekat dan gula.<br />
- Masak hingga mendidih dan tuang bancuhan tepung jagung<br />
Sesuaikan kepekatannya, siap.<br />

- telur kuning tu kocok biasa2 jew tak perlu berbuih<br />
- masukkan butter/margerine & minyak dalm kuali, panaskan hingga cair<br />
- pegang senduk dan pusing2kan (TWIST) senduk dlm minyak tu..[refer video]<br />
- sambil pusing senduk dlm kuali sambil tuang kuning telur tu.. pusing laju2, nk dpt halus cara tuang tu tgn angkat tinggi sikit & kuning telur turun halus jew ke dasar kuali<br />
- pusing jew smpai telur tu masak kuning keemasan, tapiskan tos minyaknya.. siap<br />

Bahan-bahan Utk masak udang :<br />
<br />
12 ekor udang saiz besar atau sederhana [Aleen buat 20 ekor]<br />
sdkt garam<br />
sdkt lada sulah<br />
myk utk menggoreng<br />
3 ulas bwg putih - dicincang<br />
6-8 tangkai cili padi - dihiris<br />
5 tangkai daun kari<br />
1/4 cawan susu cair<br />
sdkt butter utk menumis<br />
sdkt serbuk lada sulah<br />
garam secukup rasa<br />

cara-cara :<br />
Mula mula goreng dulu udang yang digaul dengan sedikit garam dan lada sulah sehingga agak berubah warna dan masak. Jangan goreng terlalu lama sangat nanti udang akan mengecut, tak cantik dan agak keras bila dimakan. Angkat dan toskan minyaknya. Keluarkan minyak tu dari kuali, tak nak guna lagi.<br />
Panaskan butter/margerin di dalam kuali dan tumis bawang putih, cili padi dan daun kari hingga garing dan naik bau.<br />
Kemudian masukkan susu cair dan masak sebentar. Masukkan udang yang digoreng tadi, sedikit serbuk lada hitam/putih dan garam secukup rasa. Jangan bubuh banyak sangat garam yer sebab butter atau margarine sudah ada garam.<br />
Setelah semua bahan masak dan mesra, bolehlah dimasukkan ke dalam pinggan hidangan dan taburkan sarang telur/floss yang kita buat tadi. Siap<br />

- agak2 turn kuning perang tutup api, masih kacaukan lg bawang putih tu berubah jd warna brown keemasan, terus pindahkan ke bekas lain.. jgn biarkan dlm kuali nnt hangit bawang tu sbb haba kuali tu masih ada dan panas ok. rasa pun pahit.<br />

- masukkan air & semua bahan lain kecuali tepung jagung<br />

untuk pulut mangga :<br />
400 gram beras pulut, rendam semalaman<br />
1 cawan santan pekat<br />
1 cawan santan cair<br />
2 sudu besar bijan, disangai tanpa minyak untuk taburan<br />
3 biji mangga<br />
<br />
untuk kuah santan :<br />
1 cawan santan pekat<br />
1 sudu kecil tepung beras atau tepung jagung, bancuh dengan sedikit air<br />
1 helai daun pandan, carik dan simpul<br />
garam secukup rasa<br />

Cara Penyediaan<br />

Cara-cara untuk pulut:<br />
1. kukus lapik daun pandan atau pisang, letak beras pulut, masak 20 minit atau hingga pulut betul2 masak.<br />
2. bila dah lembut angkat pulut masukkan dlm bekas besar<br />
3. Satukan santan pekat + santan cair + gula + garam dan kacau sebati..<br />
4. tuang bancuhan santan ke dalam pulut yang masih panas tadi.. balik-balikkan pulut dgn senduk dan biar seketika supaya kuah bancuhan meresap ke dalam pulut.. pulut dah kering meresap kuah santan, ambil garfu dan gemburkan pulut.<br />
5. Hidang bersama kuah santan, buah mangga dan taburan bijan..<br />
<br />
Cara-cara untuk kuah santan:<br />
1. Panaskan santan pekat di dalam periuk dan masak di atas api yang sederhana.. masukkan garam + daun pandan + bancuhan tepung..teruskan kacau supaya santan tak berketul.. Kalau agak cair masukkan sedikit lagi bancuhan tepung.. boleh agak-agak kepekatan sendiri..<br />

Bahan-bahan : untuk adunan tepung kuih keria<br />
1kg ubi keledek [oren,ungu,putih blh je]<br />
230gm tepung gandum<br />
2 tbsp tepung beras<br />
1/2 tsp garam halus<br />
1 tsp double action baking powder<br />
2 tbsp baking powder<br />

Bahan-bahan : untuk gula melaka/karamel<br />
2 btg/ketul gula melaka [anggaran berat lbh kurang 350gm]<br />
1 ketul gula batu [agak2 kita,jgnlah sebesar penumbuk kita]<br />
1 tbsp gula pasir<br />
2/4 cawan air <br />
2 helai daun pandan<br />

Cara-cara:<br />
ubi buang kulit, cuci bersih, potong kecil supaya senang empuk semasa rebus nnt, masukkan garam sekali semasa rebus agak2 jer.. dh siap toskan, alih dlm bekas lain, lenyekkan bg halus, nk tumbuk guna lesung batu pun blh atau apa2 ajer yg u alls rasa sesuai..<br />
kemudian, bahan kering di atas diayak semua sekali, masukkan tepung sikit2 campur dgn ubi, buat hingga tak melekat,melekit dijari.. jika ada lebihan tepung tak apa.. ikut lembut adunan..nama je sama ubi keledek.. tp ada oren, ungu, putih..bila di rebus kejadian x sama.. ada yg kata ubi putih terbaik, kurang air.. saya guna yg ungu.. kt kedai tu je yg ada..<br />
dah siap, kasi timbang, saya buat 40gm.. so sebaya je kuih keria montok saya..<br />
lps tu buat lubang di tengahnya, guna chop stick atau apa2 stick yg sesuai utk buat lubang pd kuih keria<br />
pastikan minyak betul2 panas, baru mula menggoreng, goreng hingga masak.. ketepikan<br />

Cara-cara sediakan air gula/karamel gula melaka :<br />
hancurkan gula melaka kpd kepingan kecil, sama juga dgn gula batu..<br />
dlm kuali masukkan air, kemudian masukkan kesemua gula2 tu bersama daun pandan, masak hingga gula2 tu mencair tiada ketulan<br />
pastikan air gula tu berbuih masukkan kuih keria, gaul rata perlahan.. hingga air gula tu bersalut sekata dgn kuih keria<br />
masak jgn kering sgt air gula tu, biar lembap2 sikit.. gula tu nnt akan mengeras sendiri.. berkeping sgt pun x blh.. nnt habis karamel tu tercabut sendiri.. terbotak sudah kuih keria kamu.. <br />

POPCORN KARAMEL PEKAT HOMEMADE<br />By ~ Aleen Aireish<br /><br />Bahan-bahan untuk PopCorn :<br />2 sudu besar margerine<br />2 genggam jagung kering [bertih jagung]<br /><br />Cara-cara : <br />- sediakan kuali/periuk agak besar , cairkan margerine, masukkan jagung kering, gaul sekata. Tutup kuali/periuk dgn penutup yg sesuai, tunggu sebentar.. akan kedengaran pop pop pop berdendang, siap.. ketepikan..<br /><br />Bahan Karamel :<br />2 sudu besar margerine<br />7 sudu makan gula pasir<br />2 sudu makan susu pekat<br /><br />Cara-cara :<br />- masukkan margerine & gula ke dlm kuali/periuk, sambil kacau2 biarkan mencair, api kecil je hati2 jgn hangus nanti pahit<br />- masukkan susu pekat manis, kacau sebati, masukkan pop corn dlm periuk karamel, kacau rata.. tuang popcorn ke dlm bekas lain... biarkan suam.. slps tu cerai2kan/lerai2kan pop corn supaya tk melekat kuat.. <br />- letak atas loyang yg dilapik baking paper, bakar sekejap popcorn karamel tu tadi supaya lebih rangup. Untuk Nasi :<br />
masak macam biasa, aroma wangi saya guna daun pandan<br />

Untuk Ayam Goreng Berempah :<br />
1/2 ekor ayam potong sederhana kecil<br />
3 inci halia **<br />
3 inci kunyit hidup **<br />
3 inci lengkuas **<br />
1 biji bawang besar **<br />
4 ulas bawang putih **<br />
4 batang serai **<br />
2 helai daun limau purut [diracik halus]<br />
1 s/mkn ketumbar **<br />
1 s/m jintan manis **<br />
1 s/m jintan putih **<br />
3 s/b serbuk kari daging<br />
1/3 cawan tpg jagung [nk lebihkan sikit pun blh]<br />
garam & gula secukupnya<br />
~>> Caranya : <br />
- ayam cuci bersih, bahan bertanda ( ** ) kisar halus campurkan dgn ayam.. masukkan bahan2 yg lain sama.. gaul sebati, perap 15-20 minit.. goreng tenggelam dlm myk ok.<br />

Untuk Kuah :<br />
3 inci halia [dihiris] ***<br />
3 bj bawang merah [dihiris] ***<br />
3 ulas bawang putih [dihiris] ***<br />
1 btg kayu manis ***<br />
2 bunga lawang ***<br />
4 bunga cengkih ***<br />
4 buah pelaga ***<br />
1 kotak santan <br />
1 paket kecil kari daging<br />
1 paket kecil rempah nasi beriani<br />
3 s/mkn serbuk lada<br />
sedikit air asam jawa<br />
2 kiub ayam/bilis<br />
garam & gula secukup rasa<br />
~>> Caranya :<br />
- serbuk kari + rempah beriani + serbuk lada + air = jadikan pes<br />
- panas myk, tumis bahan bertanda ( *** ) hingga naik bau<br />
- kemudian masukkan pes td, tumis hingga pecah minyak<br />
- masukkan ayam gaul rata, masukkan santan tambah air agak2 yer<br />
- letak air asam jawa, kiub ayam.. biarkan masak.. mana rasa tk sempurna boleh je top up bg secukup rasa..<br />

Untuk Sambal Cili Cuka :<br />
5 bj cabai merah besar<br />
7 bj cili pedas<br />
1 kiub ayam/bilis<br />
garam & gula secukup rasa<br />
